DELICIOUS RIDGE GOURD CURRY

Ridge gourd is used as a vegetable to make dal, curry and chutney. Its skin is also used to make chutney. In Tamil it is called as Peerkangai and is easily available in the market. when compared to other vegetables the cost of this is very less. The time required to cook this vegetable is also less and its get cooked easily as it is soft and fibrous. Here is a recipe of ridge gourd curry which you can prepare in a jiffy.

INGREDIENTS:

Ridge Gourd

Grated coconut

Salt

Oil

Mustard seeds

Red chillies

Urad dal

Rice flour (if needed)

PREPARATION:

  1. Wash ridge gourds and peel the skin

  2. Cut into small pieces

  3. Take kadai. pour oil, add mustard seeds, urad dal and red chillies. Fry till golden brown

  4. Then add ridge gourd and salt. Let it cook for sometime

  5. Add grated coconuts. If the curry has some water, add little rice flour.

  6. Mix well and serve hot with white rice, ghee and sambar.
